A manual paddle espresso machine gives the user complete control over pre-infusion, pressure, and brewing times with paddle valve control. In essence, the paddle places the responsibility for starting and stopping the pre-infusion, pressure, and brewing stages of the espresso shot solely in the hands of the barista.
